Hi everyone!
I’m going to be back in Bombay to teach a bunch of classes this May!
I’ve planned 5 different types of classes this time around. They’re a mix of indulgent treats, eggless baking, breads and there’s also a class on healthier bakes that are gluten-free or low on refined flours and sugar. Plus a very special class on of my favourite French treats: choux pastry!
With each new class, I incorporate fresh recipes with a simplified approach so you can feel confident replicating the bakes in your own kitchen. I use only the best ingredients that are locally available and easy to find. All the classes are demo-based.
TEA TIME TREATS
A smashing mix of beautiful flavours coming together. Fruity, nutty, chocolatey, with a little olive oil thrown in for good measure (and also because olive oil + vanilla is awesome!)

SWEET BAKES
I am not one for substituting eggs with other ingredients just to make things eggless. Instead, I’d rather make recipes that don’t depend on eggs, celebrating all the other ingredients. These recipes taste so good, you won’t even notice they’re eggless.

- Honey, Espresso and Chocolate Cake with Whipped Ganache

CHOU CHOU
For this class, you’ll learn how to make choux pastry, like the ones you see in Parisian pâtisserie displays. It’s a fairly technical class that will equip you to come up with your own elegant creations.

GUILT-FREE INDULGENCE
I wouldn’t want to call them healthy bakes, because that is tinged with the notion that if it’s healthy, it’s probably not tasty. With these recipes, I’ll demonstrate how you can bake delicious treats that are low on refined flours and sugar and yet packed with flavour and richness from fruits, nuts and alternative flours.

BREADS AND PANCAKES
I love this mix of breads: sweet, savory, buttery, whole wheat. Learn techniques to making the perfect Swedish-style roll, crusty Ciabatta, French lamination. Plus, find the secret to making the fluffiest pancakes ever.

Class Format
Each class will be 3 – 3½ hours long and there will be around 10 participants per class. They are all demo-based and you will receive printed recipes in each class. At the end of the class, you get to try and take home all the treats! I’ve got doggie bags for you, but the ones who come year after year are known to come equipped with their tiffin boxes. :)
How to Register
The classes will be conducted at the Eighth kitchen studio in Bandra. All the classes are priced at Rs. 4,000, except the more technical class on choux pastry that is priced at Rs. 4,500.
