I had been making the lassi by mixing curd and sugar after eating my lunch, so it is not actually about mango lassi. I just wanted wanted to share some thoughts I had. IMO lassi should be made with manual blender, and it should be made with whole milk from which fat has not been removed. If you make with a hand blender that is not powered, the curd does not get hot. When mixing the curd and sugar, the butter will separate out of the curd and the sugar will dissolve or mix with the butter, like pastry, and that is the real highlight of the lassi. Tasty!!
