been checking out your blog for recipes regularly for the lat one month and you have some lovely stuff! and easy to make too for a new and blubbering cook like me... now a quick question.. i am on the entire whole wheat drive and dont like using maida in anything... so how can i substitute recipes that ask for bread flour with regular whole wheat flour. not sure how the gluten content works and what i need to do to make it rise well... 

also if a recipe mentions white whole wheat flour - typical to UK i think... how can i substitute that with maida+wheat combo? any views on that...
