(makes 6)
4 eggs
120g sugar
200g butter
200g Lindt dark chocolate (I used one with a hint of holiday spice)
120g flour
- Mix the egg and sugar till light and fluffy.
- Melt the chocolate and the butter together.
- Mix together the egg mixture and the chocolate mixture.
- Sift the flour, then gently fold it into the above mixture.
- Butter the mould, then sprinkle with sugar, then butter again. This will make the cupcakes look nice and shiny and of course, assist in unmoulding.
- Add the batter to the mould and bake at 200ÂșC for 20-30 minutes.
After demoulding the cupcakes I was very excited to use my stencils that I had bought a while ago. I have 4 shapes: a heart, a butterfly, a star and a flower. All my favourite things to doodle when I’m whiling my time away. :D
The cupcakes turned out to be extremely moist and dense. I served them warm with a strawberry coulis and vanilla ice cream.
My Valentine absolutely loved them, which was the most satisfying emotion for me. :)
Strawberry coulis
1/4th cup sugar
2-3 tablespoon water
Few drops of lemon juice
- Hull the strawberries. Cut into quarters.
- Put all the ingredients in a pan and simmer for 7-10 minutes on a low flame. Keep it covered.
- Chill the coulis before serving.
The cupcakes were a delight. Now I’m thinking I’ll be more indulgent the next time and cover it with a cream cheese icing. and maybe drop some bits of Oreo in the batter before it's baked. Yum!
